1 lb. chicken breast, cubed or your favorite chicken pieces.

2 tablespoon extra virgin olive oil

2 generous tablespoons of Pietra's Magic Spice Curry Blend

1 medium yellow onion, chopped

1 cup cauliflower florets

1 cup cubed, peeled potatoes

1/2 cup frozen green peas 

1 cup sliced, peeled carrots 

1 cup chopped tomatoes, fresh preferred or canned 

2 cups water (or chicken broth)

2 teaspoon salt, optional especially if you use chicken broth


Add curry spice blend to cubed chicken, 1 tablespoon olive oil and set aside. You can marinate up to 24 hours.

In a medium saucepan, add 1 tablespoon olive oil and saute' onions until lightly golden.  

Add chicken to onions until lightly brown

Add remaining ingredients. Cover and bring to a boil and then immediately lower heat to medium. Cook for 30 minutes.

Add salt and black pepper to taste 

Optional: Serve over rice, sprinkle cilantro on top

                 Naan and lemon wedges on the side.

                 If you like a thicker sauce, add 2 tablespoons plain Greek yogurt or heavy cream

This dish is easy to modify. You can eliminate ingredients you are not fond of such as carrots or peas.
